Ingredients
- 1 log 500 g Formed Lobster, cut into 6 slices
- 1 each Avocado, cubed
- 1 large Tomatoes, sliced
- 6 Button mushrooms sautéed
- 1 cup 250 ml Olive Oil
- 1/3 cup 80 ml Lime Juice
- 1 tbsp 15 ml Chili Powder
- 2 tsp 10 ml Cumin
- ½ cup 125 ml Cilantro, chopped
- 2 each Garlic Cloves, minced
- ¼ cup 50 ml Shallots, minced
Method
- Poach lobster roll in 180F water for 45 minutes, shock in an ice bath when complete. Slice, marinate in the vinaigrette and serve.
- For the vinaigrette: Place olive oil, lime juice, chili powder, cumin, cilantro, garlic and shallot in a bowl and whisk together.
- Left over vinaigrette can be stored in the refrigerator for future use.
Chef’s Tip
- Button mushrooms can be substituted with Portobello or Oyster Mushrooms if desired.
