Ingredients

  • 1 log 500 g Formed Lobster, cut into 6 slices
  • 1 each Avocado, cubed
  • 1 large Tomatoes, sliced
  • 6 Button mushrooms sautéed
  • 1 cup 250 ml Olive Oil
  • 1/3 cup 80 ml Lime Juice
  • 1 tbsp 15 ml Chili Powder
  • 2 tsp 10 ml Cumin
  • ½ cup 125 ml Cilantro, chopped
  • 2 each Garlic Cloves, minced
  • ¼ cup 50 ml Shallots, minced

Method
  • Poach lobster roll in 180F water for 45 minutes, shock in an ice bath when complete. Slice, marinate in the vinaigrette and serve.
  • For the vinaigrette: Place olive oil, lime juice, chili powder, cumin, cilantro, garlic and shallot in a bowl and whisk together.
  • Left over vinaigrette can be stored in the refrigerator for future use.

Chef’s Tip
  • Button mushrooms can be substituted with Portobello or Oyster Mushrooms if desired.
