Ingredients
- 1 log 500g Formed Lobster
- 1 ¼ cups 300 ml All Purpose Flour
- 1 ½ cups 375 ml Cornmeal
- 1 tbsp 15 ml Sugar
- 1 tsp 5ml Salt
- ¼ cup 50 ml Cornstarch
- 2 tsp 10 ml Baking Powder
- Cold Water
Method
- Preheat fryer to 350oF.
- Combine dry ingredients in a bowl; add cold water and mix until smooth.
- Cut formed lobster into 2-inch portions, dip into batter and fry until golden brown and crisp; 2 minutes.
- Remove from fryer, skewer each portion and serve hot with Mango Wasabi Dip.
Mango Wasabi Dip
Ingredients
- 1 ½ cups 375 ml Mango Puree
- ½ tbsp 8 ml Ginger, fresh
- 3 each Garlic Cloves
- 1 tsp 5 ml Wasabi Powder
Method
- Place all ingredients into a food processor and blend until smooth.
