Ingredients

  • 1 log 500g Formed Lobster
  • 1 ¼ cups 300 ml All Purpose Flour
  • 1 ½ cups 375 ml Cornmeal
  • 1 tbsp 15 ml Sugar
  • 1 tsp 5ml Salt
  • ¼ cup 50 ml Cornstarch
  • 2 tsp 10 ml Baking Powder
  • Cold Water

Method
  • Preheat fryer to 350oF.
  • Combine dry ingredients in a bowl; add cold water and mix until smooth.
  • Cut formed lobster into 2-inch portions, dip into batter and fry until golden brown and crisp; 2 minutes.
  • Remove from fryer, skewer each portion and serve hot with Mango Wasabi Dip.


Mango Wasabi Dip

Ingredients
  • 1 ½ cups 375 ml Mango Puree
  • ½ tbsp 8 ml Ginger, fresh
  • 3 each Garlic Cloves
  • 1 tsp 5 ml Wasabi Powder

Method
  • Place all ingredients into a food processor and blend until smooth.
